Are you tired of making the same old grilled cheese sandwich on your electric griddle? Here are some fun recipes for you to try that will make you think twice about grilled cheese sandwiches.  Electric griddles are the perfect tool for making the perfect grilled cheese, but there is no rule that you have to make the same sandwich every time.  We all have had the classic American grilled cheese, often served with tomato soup.  Two pieces of buttered bread (usually white bread) with one or two pieces of cheddar cheese, American cheese or Velveeta in between.  You toast one side, then flip it over and toast the other side.  When you are done, you have a buttery, cheesy gooey sandwich.

There is nothing wrong with a traditional grilled cheese, but there are so many different options that are very easy to make.  Some of the options start with a traditional grilled cheese sandwich, then adds a few interesting ingredients.  A few recipes are different in that they use chicken, steak or other meats.  It’s time to get creative and dress up that grilled cheese sandwich with a fun electric griddle recipe.

Chipotle Grilled Cheese Sandwich

Chipotle Grilled Cheese SandwichThis is a very fun sandwich! Yes, the picture is intimidating, but you are making a grilled cheese sandwich with chicken, avocado and tomato, with chipoltes.

Chipotle Sauce Ingredients

1/4 cup yogurt, preferably Greek

2 tablespoons mayo

1/2 teaspoon chopped minced chipoltes

2 tablespoons abodo sauces from a can of chipotles in abodo sauce

1 1/2 teaspoon white wine vinegar

1 1/2 teaspoon honey

1/8 teaspoon garlic powder

salt and pepper to taste


Mix together all of the chipolte sauce ingredients.  Add salt and pepper to taste.

Warm 2 cups of cooked chicken breast in microwave, about 30 seconds.

Spread butter on one side of 4 pieces of sourdough bread.  Flip and butter the other side.

Put one tablespoon of chipolte sauce on each piece of bread.  Top with one slice each of cheddar and Monterey Jack cheese.

Add warmed chicken, a tomato slice and 2 slices of avocado to each piece of bread.

Close up the two sandwiches.

Heat your electric griddle to 300 degrees.

Add a dab of butter for each sandwich to the grill, then place a sandwich on the butter.

Grill for about 4-5 minutes on each side, being careful not to burn the sandwich.
